The Americas Hit Yosemite


After being in the Bay area for many years, we just made and survived our first impromptu trip to Yosemite. Two bears, one rock fall, one forest fire and some beautiful hiking later we are stronger (from carrying the boys), more patient (maybe), and are pretty sure that infants and toddlers don't make the best neighbors at the campground

Barb's Tasty Granola

Mix together:
2/3c dark brown sugar
4T water
6T butter (melted)

Add in:
6c thick rolled oats
2c sliced raw almonds
6-8T dark brown sugar
Salt to taste

Spread on parchment lined, rimmed baking sheet. Bake at 250 for ~4+ hours until light golden brown. Keep an eye on it. Store in an airtight container.

If you need to re-crisp, put it back in the oven for an hour at 225.

Charlotte's Addictive Snack Bars for Kids of All Ages

This recipe came from our buddy Charlotte Hardwick. They are devoured everytime they are made.

Grease a 9 x 13 pan with coconut oil/canola oil

Mix the following in a bowl and set aside:
  • 1 1/4 c rolled oats
  • 1/2 c oatbran
  • 1 1/2 c unsweetened crisp brown rice cereal
  • 1/4 c flax seeds
  • 1/4 c coconut
  • 1/4 c sunflower seeds
  • 1 tsp sea salt
Combine the following over low heat until it thickens
  • 1 cup of brown rice syrup
  • 1 tbl of vanilla
  • 1/2 c peanut butter/almond butter
Pour over oat mixture, stir and spread in greased pan and cool to room temp

Add in your favorite flavors to the oat mixture:
  • 1 cup of raisins or cranberries
  • 1 cup of walnuts,peanuts, almonds
  • 1 cup of chocolate chips
  • 1/4 sesame seeds
  • 1 cup of dried apricots
Our FAV is cranberries and choc chips

This base recipe is sugar free and wheat free. You can also leave out the coconut or peanut butter if you want.

Hard to believe that this was the best shot we could get, but it was. My good buddy Allison who lives in Dallas came over yesterday with her kiddos -- Catcher, Molly and Griffin -- who are all a little bit older a younger than ours. Good times... Wish they lived closer.

Novice Gardeners


Since we're zoned for agriculture, we figured we needed to try our hand at a vegetable garden. Kevin and Wendy are helping us and will share in the bounty. We're learning slowly but the garden is making progress. Lettuce and radishes are in. Beans, peas, tomatoes, chard, leeks, watermelon, jalapenos, artichoke and squashes are growing.

Chili Rubbed Pork Tenderloin

This is a big seller at our house these days. Fast, easy and good.

3T olive oil + more for pan
3 garlic cloves, minced
1T chili powder
1lb pork tenderloin
1.5T sesame seeds
s&p

Preheat oven to 400. Combine oil, garlic & chili powder in a ziploc and add pork to coat. Sprinkle w/sesame seeds and press them into the meat. Brown in an oven proof skillet (2-3 mins per side). Transfer pan to oven for 17-18 mins. Let rest 5 mins and serve.
